We want the finest wine available to humanity, we want it here (Vaughans Anchor Bar in Liscannor, Co Clare) and we want it now (though we don’t have to ask as Denis Vaughan is taking great pride in pouring the good stuff. And by good, we are being spoiled with really, really good).

It’s the beginning of the summer season. The sun is shining. Lounging along the Wild Atlantic coast, everything feels right with the world. That is, of course, why you go there. Off the beaten track. Certainly off mine. We’ve already been treated to a lunch at the Vaughan family’s other enterprise in nearby Lahinch. Vaughan’s On The Prom is a relatively modern addition to the family business, offering the finest seafood with views out across the beach and over the wide Atlantic, where surfers ride the waves.
