Historic former 60 Hope Street site to become ‘cosy’ pub

The Dog & Collar Public House promises to bring cosy nooks and snugs all designed ‘respectfully’ of the 200 year old building

The site which was formerly home to much-loved restaurant 60 Hope Street is to be transformed into a ‘cosy’ pub. The team behind Duke Street’s PINS Social Club have taken over the well-known venue and started renovation works on the site.

After a brief spell as Asian fusion restaurant Liu Shi, the historic building will open again in the new year as a pub named The Dog and Collar. Work is currently underway at the site with the venue expected to open in 2025.

PINS directors Dan Gillbanks said: “The fit-out is well under way. The initial plans and designs are befitting of the building, immediate area and historic location. I’ve always imagined 60 Hope Street as a really cosy and perhaps elevated pub. I’ve lived in the area for a short while but, even before then, I had ideas and designs for how it might look and feel. I think a pub fits the building perfectly. We want to do it justice and treat it with the respect its history deserves.”

Laid across three floors, the new pub will have an upper ground taproom, a first floor ‘parlour’ and a lower ground ‘tavern’ – the interiors will be reminiscent of Cheshire country pubs. Whilst the name, The Dog and Collar, is a playful nod to the building’s proximity to both the Anglican and Catholic Cathedrals, located at either end of Hope Street.

The building was home to 60 Hope Street restaurant for more than 20 years until the venue closed its doors in 2021. The building then became Turkish restaurant Elite 60 before being turned into Liu Shi.

In a message shared on the 60 Hope Street Instagram account in April 2021, its owners announced the restaurant’s closure and thanked customers for their loyalty over the years. The heartfelt message said: “1999 St George’s Day we opened the doors of 60 Hope Street with amazing support from family and friends. Over the past 22 years it has taken us on the most incredible journey. We had so many highs and have been privileged to work with some amazing people. Back in 2008 we were proud to be at the heart of Liverpool’s capital of culture and the renaissance of our amazing city. We would like to thank everyone who made it happen, blessed by the most loyal support from all our customers, some who have become dear friends. As we close the doors of 60 for good, the next chapter begins. See you all again very soon.”
